It originated near the port of Trapani and has ancient origins. Genoese sailors, docking in the port of Trapani, taught the Sicilians how to make pesto alla genovese. The people of Trapani decided to modify the recipe using typical Sicilian products, replacing the basil with dried tomatoes and the pine nuts with almonds.
Its flavor captures all the flavors of Sicily, and with a hint of chili pepper, it's versatile—whether used as a seasoning for first courses, as a spread on bruschetta, or as a filling for delicious crostini.

The oily part that rises to the surface may separate, and this is a perfectly natural behavior. Simply stir carefully to obtain the original creaminess and then serve.
