Typical Neapolitan format.
Made with durum wheat semolina and water, just as tradition dictates, it was born as a popular pasta and has the shape of giant macaroni.
Its name derives from “paccaro” meaning “slap” in Neapolitan, due to the sound the pasta makes when diving into the sauce.
Its full-bodied, tough and rough consistency excites all the senses from the first bite.
We selected this format as a prime example of Italian artisanal production, as it comes from a circular supply chain in which the farmer harvests his wheat, has it ground at the local mill, processes it to obtain the desired shape, and finally resells it directly.
Bronze-drawing and slow drying give the pasta greater roughness, porosity, and versatility, making it perfect with fish sauces, but also excellent mixed with any type of sauce or ragù.
