Penne pasta has a precise birth date: 1865, when a Genoese pasta maker patented a machine capable of cutting pasta diagonally, imitating the shape of quill pens used for writing. Made exclusively with durum wheat semolina and bronze-drawn, ridged penne are distinguished by their porosity and texture suitable for creaming. Among many pasta shapes, it is the most traditional and loved by adults and children alike.
