In Naples, genovese is a ritual; it's a white sauce made with lots of onions, carrots, and spices.
It dates back to the Aragonese era when the managers of some inns in the port area of Naples, originally from the city of Genoa, prepared a fabulous sauce where the onion was the star... hence the name Genovese.
Irresistible, to your liking, even with the addition of meat. Our Genoese sauce, in the Neapolitan tradition, is served with broken ziti, but you can use any pasta shape you prefer.
