Zucchine tagliate a rondelle essiccate al sole, leggermente fritte, poi insaporite con aceto, aglio e foglioline di menta, secondo la ricetta "alla scapece". La successiva conservazione in olio ne preserva il gusto, ottenendo come risultato un sott'olio dal sapore armonioso e bilanciato: delicatamente acidulo, aromatico e avvolgente.
