From ancient Sicilian tradition, we wanted to enhance the freshly picked tomato sauce with anchovies and tuna bottarga.
The Sciacca anchovies used are processed within 24-48 hours of being caught. They are selected, processed by hand, pressed in brine for the time necessary for maturation, and combined with the sauce and a generous sprinkling of bottarga, they create a riot of flavors.
Ideal for seasoning a pasta dish or to enhance a fish dish.
