The “strasc'nat”, from the custom of dragging the dough across the table with a finger to obtain the classic, concave and round shape ideal for collecting all the sauce that accompanies it.
They spread between the 12th and 13th centuries, especially in the Bari area, and today they are the main symbol of Puglia's gastronomic tradition.

Bronze-drawing and slow drying give the pasta greater roughness, porosity, and versatility, making it perfect when paired with our turnip greens sauce, as tradition dictates, but it also pairs well with any other sauce.
