Thanks to its particularly elongated, resistant and elastic grain, of a pearly color which does not overcook, does not disintegrate and above all due to its slightly sweet flavour, it is considered one of the most prized Italian rices.
The low tendency to lose starch creates a good ability to absorb liquids during creaming and subsequent seasonings.
This is particularly useful when preparing the famous "risotto al sauté".
In short, Carnaroli rice is good and versatile to the point of being used in haute cuisine, as well as in recovery cuisine.
