The undisputed star of Sunday lunches in upper Lombardy, polenta taragna differs from the traditional version in its stone-ground mix of corn flour and buckwheat flour, which gives it its distinctive appearance and flavor.
It can be prepared as a single dish melted with typical cheeses or to accompany meat, game, porcini mushrooms and ragù.
